Autumn is here and the produce stands are beginning to fill with squash, apples and one of the season’s most popular cooking items: pumpkins! Pumpkins are great in all kinds of dishes, both savory and sweet. Luckily, pumpkins are gluten free foods, so with little tweaks to traditional recipes people with gluten intolerance can enjoy the same fall treats as everyone else. Gluten Free Pumpkin Cupcakes!
- 1 stick unsalted butter (room temperature)
- 1 cup packed brown sugar
- 1 tbsp molasses
- 1 tbsp honey
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup pumpkin puree
- 2 cups gluten free flour
- 1/4 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp pumpkin pie spice
- 1/2 cup buttermilk
- 1/2 cup chopped pecans (optional)
- 1 cup raisins (optional)
Frosting:
- 8 oz. cream cheese, room temperature
- 1/4 cup unsalted butter, room temperature
- 1/4 cup maple syrup
- 1 cup sifted confectioner’s sugar
1. Preheat oven to 350F and position rack in center of oven.
2. Using an electric mixer, cream butter, brown sugar, molasses and honey for about 3 minutes till light and fluffy. Add eggs one at a time, mixing well after each addition. Add pumpkin puree and vanilla and mix until completely incorporated.
3. In a separate bowl sift together gluten free flour, baking soda, baking powder, salt and spices. Add the flour mixture and buttermilk to the pumpkin batter alternately in three additions, beginning and ending with the flour mixture.
4. Add pecans and raisins and mix by hand.
5. Spoon batter into prepared (greased or paper cupcake cups) muffin tin 3/4 of the way full. Bake for about 18 minutes or until a toothpick inserted into center comes out clean. Cool completely before frosting.
For Frosting:
With an electric mixer, mix together cream cheese and butter until smooth. Add maple syrup and confectioner’s sugar and mix until combined.
