Ingredients
3 eggs
1 cup sugar
1/2 cup oil
2 Tablespoons unsweetened cocoa
1/2 cup potato starch
1 cup nuts, chopped
Directions
Beat the eggs and sugar until light and fluffy. Gradually add the oil, then the cocoa and potato starch. Blend together. Stir in the chopped nuts. Pour into a lightly greased 9-inch square pan. Bake at 350 degrees for 30 minutes. Cut into squares.
Obviously, the nuts should be the kind you prefer or can be removed for those with allergies. Potato starch, or potato flour, is a great substitute to wheat flour for baking and thickening soups, sauces and stews, without adding gluten to your diet; our online store offers the Bob’s Red Mill variety.
